Fish Tweezers for the removal of Salmon Pin Bones (not for fish brows)
Our fish are caught with care and reverence — cut and packed with human hands as fast as our artisan handling allows. Because of our emphasis on intrinsic flavor and texture retention, we do not "rest" our fish for 48 hours as is needed for fresh-caught fish to release the pin bones without tearing the delicate flesh. If we attempt pin bone removal any earlier in the process, we will have tearing. We'd love to provide this convenience for you, but in our hearts, we feel it's more important to uphold quality and freshness of flavor, and we think this superior quality is worth the few minutes of additional prep time.
Instead, we recommend you pull pin bones with fish tweezers at home just prior to cooking. We like to bring our fish temperature up by counter resting before cooking* — much like you would a fine tenderloin. That's the secret to a nice cook-through on the grill.
Tweezers will only be included with your fresh fish order — we will not ship them as a separate order.
