We are a second generation Alaskan fishing family. 
Your patronage allows our small family business to compete in a seafood market place dominated and largely controlled by huge volume corporate producers. We appreciate the opportunity you have given us to directly market fresh caught wild seafood- from our hands to yours.

Copper River King Salmon
Premium Portions

  •  Each selection ranges from 2.50 lb to 3.00 lb and contains 5-6 individually vacuum sealed, hand cut portions that consistently average 8 oz each.
  • Unlike industrialized large scale commodity seafood sales we proudly offer only all premium cuts with no end tail pieces or odds and ends trimmings included. We leave the prized belly pieces intact on our cuts.
  • We are extremely selective about the size class and quality of the Copper River King Salmon we use to produce the most premium well cared for product imaginable. Consistent care from our boat to your home. Our quality is unmatched. 

*Damn Near Perfect Portions

  • Each selection averages 2.00 lb and contains 4 individually vacuum sealed, hand cut portions that consistently average 8 oz each.
  • We don't know we're making "*Damn Near Perfect" cuts until after final inspection by Sarah. Every fish is handled with the same care at harvest and during production as our Premium Portions. But none the less, at times some portions are held to the side.
  • Slight cosmetic defects ranging from an upside down label to a fish scale or tissue line taking center stage on an otherwise flawless fillet. On rare occasion includes an odd shaped section (never a tail tip) but most often taken from the exact same section as our premium offerings. 
  • We strive for perfection and when we don't quite get there, we're honest about it. Most often customers tell us our seconds far surpass what they have received as "premium" from large scale seafood suppliers. 

Collars

  • Each selection ranges from 1.50 lb to 2.25 lb and contains 4 or 6 vacuum sealed bags the each contain 1 collars, split in half for ease of preparation. Average per collar weight varies.

We are only allotted to catch a small carefully regulated percentage of the total annual migration of Wild Salmon returning to the Copper River Watershed. This ensures fish and ocean health in perpetuity.

Our fish is so delicious it’s a breeze to prepare. The lightest coating of your oil of choice (olive, avocado, walnut etc) to hold a crumble of Himalayan or sea salt and twist of freshly ground peppercorn results in an unparalleled dining experience. Exquisite on the grill, oven or stovetop.

In the commodity seafood industry, standard practice is to allow fresh caught salmon to "relax" for 3 or more days, so that pin bones can be removed without damaging the delicate meat- ours is frozen and packaged long before then. We prefer providing an exceptional quality with minimal handling and maximum freshness. We lock in our fresh caught flavor and nutrients with cutting edge flash freeze techniques. 

 

WILD ALASKA COPPER RIVER KING, COLLARS

Also known as “Kama” at your local sushi shop. 

  • 100% Traceable - Small Boat Catch
  • Genuine Wild-Caught Copper River Salmon
  • Copper River King Salmon is nutrient rich with an approachable flavor, and unparalleled silkines on the palate. This is the most coveted Salmon on the planet, and for good reason. There really is nothing that comes close.
  • These Collars/ Kama are taken from our Copper River King Salmon. This cut is the fattiest, most decadent section of the Salmon.
  • With a texture of King Crab, yet much richer and with a mild Salmon flavor profile. 
  • Most often served as an appetizer to indicate good things to come; not generally as a main course. 4 collars serves 2-4 people. 
  • Out of this world with a shoyu, miso, ginger, honey marinade; broil for a few minutes until they sizzle and pop, enjoy with your hands. 

Our most coveted Copper River Salmon, caught for just a few short weeks in early summer. Each fish yields two collars. Quantities are extremely limited. 

Copper River Coho Salmon

Somewhat firmer in texture than our Sockeye and King. Absolutely perfect for Poke as the texture remains firm and is not too rich when eaten uncooked. 

Similar in color and texture to King Salmon, but with reduced fat content which makes it somewhat milder in flavor. 

Coho has a very approachable Salmon flavor profile and is a good cross-over for folks accustomed to farmed salmon but wanting to make a healthy choice.  

Just like our King or Sockeye Salmon, Coho Salmon naturally has high levels of heart-healthy Omega 3 oils. It is low in sodium and a good source of protein, niacin, vitamin B12, and selenium. 

Revered as a superb grilling Salmon, though also exceptional baked, poached, or sautéed.

Moist and delicate, yet also firm and substantial with a pleasingly subtle fresh from the sea flavor. Exhibiting an attractive flesh tone of muted reds to moderate orange; attributed to their wild & natural ocean diet. Leaner than our CR King with a less robust flavor than our CR Sockeye. Offering plenty of Omega-3 and Vitamin D. An exceedingly tasty and pure protein source. CR Coho is a favorite of many!

Our CR Coho's inherently pure flavor profile shines easily with a simple preparation of sea salt, fresh ground white pepper, and a drizzle of quality EVOO. Alternatively, this CR Salmon readily accepts rich sauces like a coconut curry- lemongrass, or chimichurri without competing. A stand-out super star when simply prepared raw as Hawaiian Style Poke (always use flash frozen- never fresh).

Where do we get the Copper River Salmon we sell? Simple, we catch it on our independently owned fishing boat in the wilds of remote Alaska. On occasion we have family and friends pitch in when our catch is low- but only after they are trained in our advanced care of handling practices. To us every touch matters and all our fish must be handled with care from the moment they leave the ocean.

Nature has prepared our robust Wild Alaska Copper River King Salmon with immense fat reserves brimming with heart-healthy omega 3 fatty acids and luscious oils. Pacific Grey Cod
This is a true Cod fish! And unlike our Sablefish which is often referred to as Black Cod, which it is not.
Pacific Grey Cod has moist, firm fillets, a distinctive large flake, and a slightly sweet flavor. Well suited for a quick pan sauté, or gentle steam. But perhaps best known as a fish ’n’ chips favorite. Like all our seafood it is sushi/sashimi grade. Cook gently for tender results. 
Pacific Halibut

Halibut Chop
Easy peasy, lemon squeezy! We’ve done the prep work for you.

Halibut is Alaska’s most popular white fish for a reason. With a dense texture and pure ocean flavor, we think this fish is a great substitute for chicken in recipes. Don’t forget to adjust the cooking time appropriately. 

Our premium Halibut portions are hand trimmed to pack nicely and present perfectly. With this process, we are left with odd small cuts. Rather than include these in your order (as the big seafood suppliers do), we have sliced and diced further and now have the perfect-sized cuts for curries and chowders or tacos and ceviche. Or roll it up as sushi with avocado and crisp radish.

Lingcod
Lingcod is a versatile white fish with a mild flavor, medium-firm texture, and a subtle richness in texture. Not as silky as Sablefish and not as dense as Halibut. It's unto itself. Much deserving of greater recognition. When cooked gently and flaked, Lingcod is very similar in flavor and mouth feel to Dungeness Crab. We adore it accompanied by a crisp green salad and bright white wine. 
Rockfish, species Yellow Eye
Often referred to as Red Snapper, which it is not.
Rockfish is a versatile white fish with an exceptionally mild flavor and slightly sweet medium-firm texture. There are 30+ varieties of Rockfish caught in Alaska’s waters. Our favorite, hands down are Yellow Eye. Fun fact, this gorgeous fish is the loveliest hue of orange/red with mesmerizing golden eyes. The name Yellow Eye lands a little flat when you consider their beauty.
Sablefish
Often referred to as Black Cod, which it is not. 
Sablefish is a versatile white fish with a mild flavor, slightly sweet with the richest and most luscious texture of any white fish. Almost impossible to overcook. Perfect for the home chef that tends to have a glass of wine and get to talking with guests while simultaneously preparing a meal. Just sayin…
